St. Cloud Times — Chukwunyere Ugochukwu, an associate professor of planning and community development at St. Cloud State University, said with Central Minnesota’s changing demographics, it’s not surprising to see more stores that focus on a particular culture or geographical region.
“Their target markets are not always well-served by the larger chains,” Ugochukwu said. “Although the larger chains might have an aisle, or half-an-isle, dedicated to international foods, these smaller stores can offer items it might not be cost-effective for bigger stores to stock.
